The preparation and trade of salted anchovies in L'Escala, dating back to Greek and Roman times. The period of anchovy fishing begins the month of June and lasts until October. The capture is done through fence and light, this fishing is always done at night and in flat water as it provides better product quality.

The fresh-caught anchovies, is transferred to the factory after sale at auction. The first process that is submitted is the evisceration, then is packed in barrels with salt layers using a press of being 20 to 30 kilos for a cure. After 3 months in the barrels, the anchovy has already acquired the taste and flavor that are characteristic procediento to packaging in glass jars.
